Ham & Cheddar Cheese Brunch

What you'll need:

8 oz French Bread, torn into small pieces
1 1/4 cups shredded reduced fat Cheddar Cheese
1 cup diced lean ham
1/2 cup chopped green onions
4 large eggs - I used egg beaters
1 cup fat free half and half
1 Tblsp Worcestershire sauce
1/4 tspn red pepper

Makes 8 servings.
Each serving is 7 P+ for Weight Watchers! (NO, this is not an endorsed site!)


Step 1: Shred 8 oz of french bred.


Step 2: Add bread to the crockpot
Step 3: Add cheese.


Step 4: Add 1 cup lean ham to crockpot.


Step 5: Add chives.


Step 6: Whisk together 4 large eggs - I used egg beaters
1 cup fat free half and half
1 Tblsp Worcestershire sauce
1/4 tspn red pepper

Step 7: Pour egg mixture over the top of Steps 1- 5.
Cook for 3 hours on LOW & enjoy!

Red Potatoes!

This recipe is so easy, I'm a little embarrassed I'm blogging about it. haha!


What you'll need:

2 lbs red potatoes
2 Tbsp EVOO
1/4 black pepper
1/4 garlic salt
1/4 salt
1 tspn oregano

Step 1: Mix all ingredients with potatoes in the crock pot.

Step 2: Stir together with a wooden spoon.
Step 3: Cover; cook on high 4 hours.

Turkey Chili

This recipe is from the "Crock Pot, Comfort Food Diet Cookbook". I loved it so much, I had to share!

What you need:

2 cans (14oz each) sodium-free, peeled whole tomatoes, drained
2 cans (14oz each) sodium-free red kidney beans, rinsed & drained
1 pound cooked 99% fat-free ground turkey
1 can (14oz) reduced-sodium black beans, rinsed & drained
1 can (12oz) sodium free tomato sauce
1 cup finely chopped yellow onion (I used a red onion)
1 cup finely chopped carrot (I omited this)
1 cup finely chopped celery
3 Tbsp chili powder
1 Tbsp Worcestershire sauce
4 tsp ground cumin
2 tsp crushed red pepper (I used red pepper flakes)
1 tsp salt
1/2 cup amaretto (It's optional, I didn't use it)

Combine all ingredients from top to bottom into the Crock Pot. Cover; cook on low 7 hours.
(The cookbook says to cook on high but I cooked it on low and it was great!)

Makes 6 servings.
Each serving is 1 1/2 cups @ 6 P+ for Weight Watchers! (NO, this is not an endorsed site!)

I was REALLY full after eating 1 1/2 cups, I would probably split them up into 1 cup servings next time. I just used the recipe builder and 1 cup = 4 pts.



Brown meat!!


Add meat to the crock pot, add red beans to the crock pot.


Add black beans :)


Add peeled whole tomatos & tomato sauce.
Finely chop onion and celery.
Add chili powder, worcestershire sauce, ground cumin & red pepper flakes.
   
Add celery and onion to pot!


Carefully I mixed everything together & voila! 7 hours on low... it was delicious!

Black Bean Stuffed Peppers


What you will need:

 4 green peppers
1 medium size onion, finely chopped
1 can black beans, rinsed and drained
1 cup shredded reduced-fat mexican blend cheese
1 cup tomato salsa
1/2 cup olives
1/4 tsp dried oregano
1/4 tsp ground cumin
1/4 tsp chili powder
1/4 tsp red pepper flakes

Servings: 4
P+ per serving: 6




Step 1: Cut the tops off the peppers & clean out the insides.
Step 2: Place peppers into the crock pot


Step 3: Prepare Olives and Onions
Step 4: Coat skillet with a little cooking spray; cook onion until golden brown over medium heat. Add cumin, oregano, red pepper & chili powder.  


Step 5: Mash half the can of black beans with the back of a large spoon. Add onion mixture to the mashed beans in the bowl. Lightly mix in the rest of the can of beans.
Step 6: Put mixture into peppers, add salsa. Top with cheese. Cover with lid; cook on high for 4 hours. Enjoy :)

Welcome,

I am so glad you have come to join me in my new obsession. The crock pot. I have been a crock pottin' machine the last few weeks whipping up dishes that have been delicious! I hope you all enjoy my adventures in blogging and crock pottin'.
