What you will need:
4 green peppers
1 medium size onion, finely chopped
1 can black beans, rinsed and drained
1 cup shredded reduced-fat mexican blend cheese
1 cup tomato salsa
1/2 cup olives
1/4 tsp dried oregano
1/4 tsp ground cumin
1/4 tsp chili powder
1/4 tsp red pepper flakes

Step 1: Cut the tops off the peppers & clean out the insides. |
Step 2: Place peppers into the crock pot |
Step 3: Prepare Olives and Onions |
Step 4: Coat skillet with a little cooking spray; cook onion until golden brown over medium heat. Add cumin, oregano, red pepper & chili powder. |
Step 5: Mash half the can of black beans with the back of a large spoon. Add onion mixture to the mashed beans in the bowl. Lightly mix in the rest of the can of beans. |
Step 6: Put mixture into peppers, add salsa. Top with cheese. Cover with lid; cook on high for 4 hours. Enjoy :) |
